I know that when you click on a "last post" thread from the homepage of my forum, it will immediately take me to the most recent post. However, if you go into the sub forum and then click on the thread it will put me at the beginning and I have to go to page 9 or whatever. I believe if you click "new" then it'll take you to the last post though.
I've looked in the plug-in library and there doesn't seem to be one available.

Don't think this would require a plugin. In your layout templates, Admin > Themes > Layout Templates > Board > Thread, try replacing this line:
<span class="link target">$[thread]</span> With this:
<span class="link"><a href="$[thread.icons.new.href]" class="$[thread.link.class]">$[thread.subject]</a></span> Then on the .main table cell, remove the "clickable" class so you have this instead:
<td class="main" title="$[thread.short_content]"> Seems to work.

That seems to work on desktop, but how can I make it work on mobile?

Themes and plugins aren't supported by the mobile version of ProBoards. V6 will get rid of the mobile version and introduce a responsive layout in its place, but until then, you're limited to changing colors and not much else.
