A Two Fat Ladies' Inspired Recipe Broad Bean Salad:
1 bag of frozen baby broad beans. 2 hard boiled eggs. 1 pack of smoked lardons (or chopped smoked bacon). A good handful of chopped chives or spring onions. A good handful of chopped, fresh parsley. Olive oil. 1/2 a freshly squeezed lemon. A tsp of wholegrain mustard. Crumbled Feta cheese. 1. Put your broad beans on to boil. 2. While they are boiling, fry the lardons/bacon until really crisp, drain any fat. Put aside. 3. Squish the boiled eggs with a potato masher...until the consistency you would use for egg mayo sandwiches. Put aside. 4. Make a simple dressing out of the olive oil, lemon juice and mustard. 5. Drain the broad beans when cooked (cooking usually takes around 15-20 minutes) and just add all the other ingredients. The dressing and crumbled Feta go in last. Toss everything together with your clean hands. Can be served warm or cold. Really tasty! Even nicer the following day when all the flavours have had a chance to meld together! Keep it covered in the fridge (or in a cool place) if you want to eat it the following day. I love it on it's own, but if you're extra hungry, serve it with French bread and butter Serves 2-3 people.

I had to look up a couple of your ingredients! This sounds tasty. I do an Italian Macaroni salad that people seem to enjoy. I don't have a real recipe but I'll post it when I have the time to remember all that goes into it. It's really good because it lasts in the fridge about a week and has enough stuff in it that it is a full meal in itself.

Mine isn't a real recipe either. I've added bits and changed amounts, but I had to give credit to the Two Fat Ladies for their inspiration and original idea

My go-to summer recipe is easy: Baby Cherry Tomatoes Cauliflower Baby Carrots or Carrot Chips Green, Red, and Yellow Peppers Italian Dressing Cut up the vegetables in a large bowl. Pour Italian dressing over them until they are all covered. Chill for 24 hours. Then serve and eat.

Our supervisor brought in this really good summer time snack, dont know exact measurements but it tasted like yogurt, marshmallows, jello and fruit cocktail mixed together.

You lost me at Broad Beans. Those things are vile.
I do a simple and tasty cous cous salad: just throw Xg (depending on how much you make, I usually do around 200g/250g) of cous cous and let some stock soak in (i do double the amount of stock, so i would do 500ml for 250g of cous cous).
Once that's done, plop in 2 tablespoons of Balsamic Vinegar and the same of Lime juice. Then finely shop and mix in: Avocado Cucumber Peppers (bell peppers to the transatlantic lot) - probably 1/2 a red and 1/2 a yellow, depending on size and how much you make) Chicken (can be rotisserie, sliced, your choice)
I find it works as a snack, as a meal in itself or a smaller portion as a side with something else (quiche, something from the barbeque etc). Tasty and fairly healthy too.

You lost me at Broad Beans. Those things are vile. Ahh, but there's smoked bacon in there too! Everything tastes nicer with smoked bacon Seriously, I was never a fan of broad beans either, until I tried this. Baby broad beans are sweeter and more tender than the more mature variety
