Well crud.
I found half a workaround at this point that works for me, I have a temporary category and board where I set up all my incomplete profiles with post count off.. so when I fill in it fully, I just copy and paste it where it belongs. So proper post count and latest 'update' date, so to speak.
It works well enough one way or another.
