Do I have to switch to v5? I mean, it does say I can hold it off, but when that is up, do I HAVE to switch?

Eventually, yes, just like any software, it gets behind the times and needs updating, same goes for Proboards, if they didn't upgrade, there will not be many browsers that support it, plus the move to mobile devices has to be catered for

Well you will not have to move to V5 you could always switch forum host but there is no guarantee it will be easier to learn or offers the abilities proboards offers.

Well you will not have to move to V5 you could always switch forum host but there is no guarantee it will be easier to learn or offers the abilities proboards offers. That argument doesn't make sense, since moving to a new host would be like learning new forum software anyways. You can opt out of v5 until the end of the year. Go to Admin > Upgrade to v5 link at the top > Scroll to the bottom and click opt-out. But I can assure you that v5 is a huge upgrade and our staff here is more than happy to help you with anything and everything you need to get your forum running how you need it to with v5.

No you cannot go back but if there are plugins and themes you want to see put in a request for them and either the staff or a member who is good at coding will assist you in having it available

V5 is great, it's just new. Things are different, and you have to do things differently to get the results you want than you did on V4. But, it's not at all user unfriendly as people try to imply based off of first impressions. It's actually very much the opposite. Once you get used to it, it's much easier to maintain and add to than V4 is. As people have stated, a beta version is the best way to get a feel for it and learn your way around without having to just dive in.
It's a much better setup, especially as an admin of a forum. Times spent in the admin panel tweaking this or adding that have been cut by at least half for me. Don't want this on a particular theme? Turn the plug in off for that one. The level of customization is crazy. Don't give up before you even give it a shot. That's the beauty of Betazone, if you screw it up, it's not your actual forum, and you learn in the process. Give it a shot, and once you see what does what, I'd be willing to bet you'll like it much better.
Plus, the support team and members here are the best on the web. Have you been on other free forum hosts support sites? Be glad you found ProBoards.
