It looks like you've got your forum width set to a percentage, so the width of your categories will depend entirely on what size monitor the user is using to view your forum.

That should be fairly simple, but it will depend on how you plan on putting the images in. If you're literally adding in an img tag, then by default they won't repeat. If you're applying a background image, then you'll want to add this CSS to your forum (Admin Area > Themes > Advanced Styles and CSS):
.container.boards .title-bar { background-repeat: no-repeat; }

I've been trying to set it using the Category Image plugin, which always seems to repeat the images. Which of the above, if either, should I be using alongside it?

Uhhh. Sorry for being a pain, but where in the advanced styles and CSS should that bit of code go? I've never gone near that page before, because I'm a wee bit of a coding dunce and tend to break things like that XP

Woops, that should be "no-repeat" instead of "none". I'll edit my original code to reflect this change.
