Is there anything besides maintenance mode where I can have a background image display just saying 'come back soon' as the forum is going under hiatus for a while.

Both the maintenance mode and guests must login features allow you to enter a message to be displayed to visitors but if you need to add a custom homepage where you can use graphics then Making a Custom Page the Forum's Homepage might be the ticket with the caveat that it won't restrict access to the contents of the forum itself like the previously mentioned modes.
