Is there a way to choose a highlight color apart from the text color of a label? Can I somehow use an image instead of text ?

You can stylize them using CSS, but you'll have to obtain each of their classes by inspecting the source code of the page if you want each individual label to have its own unique appearance.
If you want to replace them with images you would need to either add the image as a background image to the label element or you can hide the text by setting the font size to 0 and use the content CSS property to add an image before the label element.
