I know that I can't directly choose what is displayed by the mobile version. But I've seen that some users are able to change some things with the stylesheet.
I need to know if it's possible to use some version of the example code below (or something else entirely) to keep information from displaying on the mobile version of a site. Specifically information that is displayed on the /members and /user/* pages. If it is possible, what would the rest of the code look like?
@media only screen and (max-width:800px) { .something {display: none;} }

Yes and no. You can use that just fine to affect the mobile styling IF the user presses the "desktop" button when viewing the forum on mobile.
However, unless they opt to do that, the mobile version will display only the separate, untouchable mobile-only CSS.
This will change in the future with v6 (forums will become responsive so there wont be an isolated mobile view), but there is currently no ETA for it. (Check the developer board on this forum for updates periodically).
