I feel like this is just me, because everybody else seems to be loving the new v5 Search, but every time I try to search for something it comes up with the error "Oops, there was an error! Could not connect to search server. Please try again." Is there something I'm doing wrong?

A ProBoards staff member will have to speak to the issue, however I believe there is already a bug report on this. (And no, that would mean you aren't the only one receiving the error.)
