Can admins remove the ability for members to choose their own group?

Yup, there are several levels of groups.
There are those that are free to join, those that you can request to join, but need to be approved, those that are invite only (with no option to request), and those that do not even appear (say for example you want to have a "probation" group you dont want people to see they are in)

I mean like groups you are already in. In your profile you can select which one you want people to see. Can you disable that?

Just to clarify on Patrick's post. By default it is up to the user to choose this, and there is no "option" for you to change this (that is a yes/no box).
That said, the template engine is very powerful and there is nothing to stop you adding this functionality yourself.

Alright. Okay. Thanks. lol. I didn't think it would be a yes/no box. I assumed the template modification would be the method to use. lol.
So that is a yes, it can be removed, but with the template?

Correct. You could either use a plugin, or a template code.

Thanks.
Sorry for so many questions lol. I'm just trying to think ahead and begin my planning, that way when it comes out I won't be just then trying to figure it out. lol.
