I've had to edit certain posts by my users, the problem is that they change it back. As the only mod, it can be hard to pick out when users have done that. Is there/ can you implement a way to lock individual posts within an unlocked thread?

While I understand where you are coming from on this, it's really more of a moderation issue. If you are editing a post for moderation reasons and someone changes it back to what must have been bad content then you need to punish them accordingly. I'm not going to tell you how to run your forum, but you need to teach your members that such behavior will result in punishment. Depending on the content you were editing punishment maybe should have already been given for that.
We will add post locking to out list of potential future features. However it will not be in launch.
I do see the potential for a plugin that could possible perform this, in a way. You could add a detection for the edit text and then remove the edit button if that is found. Detect certain member groups (mods) and display the button again. Essentially make it so that after a post is edited it cant be as easily edited again. Obviously they could use the URL to work around this, but it would impede most members. Maybe a coder can think of an even more clever way of doing this. My idea was just off the top of my head without really thinking in depth.

Would it be possible to create a new member group (for example "on probation" or "on a warning") with no ability to edit their own posts, i.e. remove their edit button all together? They could then be returned to their normal member group with editing abilities after a suitable time period.

That's a good idea.

Another forum i am on (different software) removes the edit button either after a certain amount of time, or once someone has replied, the only ones that can then edit the post is staff with permissions. Maybe this should be an option in settings

Maybe this should be an option in settings Todge designed a code here for variable time-limited editing/deleting: support.proboards.com/index.cgi?board=codedatabase&action=display&thread=70412I use it on my board and have it set to 24 hours unless someone is creating a problem.
