The Recent Threads tool is very nice, but on forums like this one where many of the posts are advertisements, general requests, or GT posts you don't always get what you are looking for. It would be nice if you could get the recent threads of a certain category. So if i wanted to see all the new BetaZone posts i could check the BetaZone category instead of the whole forum or just one of the boards...

This was requested before. What was discussed then was this (and you touched on it already).
Recent threads does show the entire forum. However if you want to view more specific recent threads you can simply click into a board. There's all the recent threads for that board. With that said I do understand your request. And it actually already exists. Just not as a single button.
Go to the Search page. Select a Category "in the category". Pick any number of days or hours "posted within the last". And select "display results as threads". Click Search.
You now have a board type thread listing of all threads for the last x days in order from most recent to not by specific category. Exactly what you wanted.
It is admittedly 10 seconds of work vs clicking a single button. But adding that button when categories currently have not options like you;re requesting would be a lot more difficult.

Ok thanks ryan One question. Would it be possible for you guys to link searches? Like say you're searching for posts within the past 2 days the url would be something like /search=boardorcatname-2days

That currently doesn't work, though we could potentially implement it. It's really not all that difficult for us to implement and support. But it's also not a high priority feature. Definitely something we would do in a later 5.x update. I'll add it to the list. Thank you.

If you were to implement this feature it would be relatively simple to add searches like the one we talked about into a one click button
