I was wondering if this was possible for the visual theme editor. Specifically, for my title bars, I want different border widths for the left and right sides. While using the editor, it only gives me option for the entire border, but I dont want any top or bottom border.
Would I just have to add the styling to my css sheet?

Er, if you know the styling code, then yes. I've never ever seen this in there, i suggest you add it to the CSS, if you would know how.

You can add your own @ variables to it, and even add them as clickable items on the Visual Editor list. As for what you're asking for your title bar, you can always just add a line that changes the width of those sides.
