What sized banner do you guys find best for signature banners in V5? Until V5, we were using banners that were 150 px in height and 500 px in width. Now, they get cut off...?

If it goes outside of the forum width, it will cut it off...
I use no more then the one on my siggy here, it does not take up alot of space in the forum...

If you are referring to the height of the forum banner, the default is 100 px. You can change it in Admin Home > Themes > Color & Theme Creator > Scheme. Just below "Customize Theme Colors" you can reset your banner height.

Signature size varies between themes. Some themes are wider, some are shorter, and some work off of percentage widths and can go either way depending on the resolution of the monitor you're using.
So technically nothing is standardized. Experiment and use what works for you on the applicable forum.
