For anyone else who needs to know:
The BBCode editor is a plain textarea. It can be customized in Themes > Advanced Styles & CSS by clicking into Forms > Text Areas. To edit the text specifically, there's a Text section within the aforementioned path.
There's also a section in Editors on this same page specifically for the BBCode editor, although it has few options.
