I just upgraded to the v5 and noticed that ages were no longer visible. Because of the type of forum I run, I need to be able to know if someone is a minor or not. Is there a way to see even that much?

Unfortunately, this is not possible. In V5, ProBoards has updated a lot of policies regarding privacy of Personally Identifiable Information (PII) in response to changes in laws regarding this sort of information online.
