I know where to change the width in the Advanced Styles, but no matter what I set it at it doesn't change. I've made sure I'm in the right Theme, but nothing changes it. Why would this be?

It appears as though you've modified your templates, so the width of the element that is specified in both the Colors & Theme Creator and Advanced Styles page is not the one that controls your overall forum width anymore. Try modifying this line of CSS that appears to have been added:
#content{margin:270px auto;width: 75%;}
