I would like to place the post count and other custom field values on the left panel and be able to hide them with the mini profile. Can this be done within a plugin?

Yes. depending on what you mean by "left panel" and which post counts/custom fields you are referring to.

I pm you Jason. In the posting template <td class="left-panel"> the mini-profile is inside that. I want to put the posts:count and what ever custom profile fields on the left-panel within the plugin.I also need to know how to cover that panel with mini-profile so when I slide the mini it will reveal the post counts and fields. At he moment the word post is below the mini in the left panel instead of underneath the mini. Hope you can help
