I've just finished changing the layout of my forum and was wondering if it's possible to edit the quick-navigation tree (IE: the drop-down navigation menu attached to the site name) so that it will reflect these changes (by including/excluding the pages I want it to include/exclude), and, if so, how I should go about doing this.
Alternately, if it's not possible to edit this quick-nav, is it possible to remove it instead?

It is not possible to edit it's contents, however you can remove it by going to Admin > Structure > Layout Templates > Forum Wrapper and deleting the following code:
$[participated_threads_link] {if $[navigation.tree]} <div id="navigation-tree"> $[navigation.tree] </div> {/if}
