For some reason when I quote something in my threads on my boards it shows my quote background black, and the text yellow. How can I change that?

You would probably need to post a link to your forum (must be guest view-able) before anyone can identify the mechanism being used to apply the color and give you a confident answer. The default mechanism for editing the color would be in your visual editor but if there exists alternate CSS on that forum that overrides the default mechanism then only inspection of a page on the forum containing a quote would reveal that. If you have multiple themes and the theme you are using is not set as default (so guests can see it) then that too will need to be temporarily set as default

Now just the text in the board is automatically yellow. How can I change that?

That would depend on which text you're talking about since there are several classes of text. It sounded before like you were saying text inside quotes were yellow thus drawing a distinction between that and text outside a quote. What I am hearing now though is ALL TEXT IN THE BOARD is yellow ( a link to a forum would help clear any confusion up)? If you look at the image I posted earlier the third branch from the top is entitled "Text Styles" where you can change the properties of several classes of "text", beyond that I can't help any further since I have no idea to which text you are referring without a link to see for myself. Are you referring to quotes on the posting page or quotes that have already been posted? As Chris said a link to the forum as well as the name of the theme affected will help drastically.

Okay, so on the theme you mentioned the Quotes section in Themes > Advanced Styles & CSS should take care of the background color completely. The same goes for the Sub-Quotes section inside of it.
The text color inherits your default post text color by default so the text should be black already. If you wish to override that with a color other than black you'll need to add new CSS to the bottom of the Style Sheet tab as there's no text color option in the Quotes section of the Visual Editor.
