INGREDIENTS


4 pineapple slices

4 scoops vanilla ice cream

Dulce de leche, for drizzling

2 tbsp. sweetened shredded coconut, toasted



DIRECTIONS


1 - Heat grill to high. Grill pineapple until charred, 1 minute per side.

2 -Top each pineapple slice with vanilla ice cream and drizzle with dulce de leche or caramel. Top with shredded coconut and serve immediately.

INGREDIENTS

1 c. Bisquick Mix

1 c. cake mix

1 c. milk

1 tsp. vanilla extract

2 eggs

1 can pineapple rings, juices drained

1 jar maraschino cherries (without stems)


DIRECTIONS

1 - Lightly grease a large sauté pan or griddle over medium-low heat. In a large mixing bowl, whisk together pancake mix, cake mix, milk, vanilla, and eggs. Use measuring cup to pour 1/3-cup pancakes onto pan.

2 - When bubbles start to form in the batter, gently add a pineapple ring. Place a maraschino cherry in the center of the ring. Let it cook for another minute or so before flipping the pancake.

3 - Cook other side until lightly golden. Serve with maple syrup.
