I would like to change or remove the header text on some of my themes. EXAMPLE: the theme Coffee Time. How would I go about replacing the text "coffee time" with the name of my board? New to changing things, and don't know code yet. (working on that)

Evening Stnoah!
Some of the themes in the library that you download have preset images and Coffee Time is one of them. If you want to remove/modify the 'Coffee Time' banner image that the theme comes with you need to go into the Admin Panel -> Themes -> Advanced Styles & CSS, expand the 'Header (Top)' -> Banner Image, and then you'll see the image linked in the 'Background Image' field. You can make that blank or change it to whatever you like.
Other modifications may be be needed depending on what you do, such as resizing the area. Don't be afraid to play around in there and test how things look :3 The Preview pane lets you see all the changes before you save them so it's quite handy to experiment without committing to any changes.
