Is there any way to customize the star colors? As in, make them a different color than what's currently offered?

Sure just go under Themes> Theme Manager> Touch the theme you are using and click images. Scroll down to group and rank stars and you can swap them out with any image. Go under groups and ranks to pick group color and how many stars a rank gets.
