Set it so that poll results are "always hidden" or "hidden until the poll is locked". =]
Keep in mind that you and any other staff member with the power to do so will see the poll results.

Only staff members [with the power assigned to them] on your forum can see the poll voters. The poll results option can be found on the create poll page, when making the poll.
