Hey @khristian,
It likely won't be added into the default theme visual editor build since background-size is a property that's supported in IE9 and later, while we still support IE8+ -- with that said, that won't be the case forever and it would be cool to have more options in the editor builder. I've marked this as a feature request for our dev's reference.

I couldn't give you a timeframe since that'd be down to Mozilla devs to address, but if I need to know whether a certain element type or CSS property is supported in my browser, I'm always checking Can I Use.
