Placing an image in the title bar is easy, goodkel.
Go to your Visual Editor Tab (Admin Panel > Themes > Advanced Style & CSS > Visual Editor Tab)
Under the "Forum" section, you'll see "Body". Click on that. There you'll see "Title Bars" and the area to fill in an image, text size, etc.
For Categorie typestyles ~ You'll change that in the same area, but you'll have to add your choice of font in the Forum wrapper.
Choosing one from the Google Library is a good option.
Then go to your Forum Wrapper Template ~ and under <head> add ~
<link href='http://place URL here of Google Font' rel='stylesheet' type='text/css'> <style> body { font-family: 'place name of your font here'; } </style>
As an example here are two Google fonts I've added on a theme ~
<link href='http://fonts.googleapis.com/css?family=Tangerine|Amatic+SC:200,400,' rel='stylesheet' type='text/css'> <style> body { font-family: 'Tangerine|Amatic+SC'; } </style>
The numbers after the font names are the weights of the fonts available.
You then add that font name in the "text" selection box in the Title Bar area in the Visual Tab.

Oops! Sorry, goodkel, you must click on "Containers" under the Body Section. There you'll find Title Bars.

Oh, and can I make the title bars floating? ie: not attached to the structure? Just free the title bar to float above the category?
Ultimately, I would like to make the whole structure to appear to be floating. No lines at all.
I dream far beyond my abilities.

Change the background color of your title bars to transparent if you don't want a solid title bar above your categories. Then only the image will remain.

I don't see "text selection" in your example, either. But, this is what I've got: Google fonts gave me these, no links: *<link href='http://fonts.googleapis.com/css?family=Cinzel+Decorative' rel='stylesheet' type='text/css'>* *font-family: 'Cinzel Decorative', cursive;* But, I don't see where to place a link, either.

Font Family is where you'll want to type your font's name.
Your Google font code would go in Themes > Layout Templates > Forum Wrapper before the closing </head> tag. You'll only need this part of the code you posted:

The image is there and the background is somewhat transparent. Unfortunately, what was previously there is still peeking through. I probably did the whole transparency thing wrong.

According to your editor your title bars are currently using #f6fbf7 as their background color. You'll want to check the transparent checkbox when selecting a background color in Body (Content) > Containers > Title Bars on the Advanced Styles & CSS page.

I am being a real pain with this.
Maybe I should just realign the text to the left and resize the width of the image to follow it to the right. Like this:
Category--->Image
Seems much easier, though I still need help with that, than what I originally had in mind: Category _________Image_________

If you want the background image to be below the category name that can also be done. You'd just need to change the background position for your title bars to center bottom, then add this to the bottom of the style sheet and adjust the height until you're satisfied with it:
